The Cuisine::pro® Damashiro Emperor Chef's knife is a 6-inch all-purpose kitchen knife designed for precision cutting. Crafted from high-quality Japanese 420J2 steel and ice-hardened, it features a curved blade that allows for rocking motions on the cutting board. The blade has a distinctive Damascus-inspired pattern with flowing water-like mottling, achieved through traditional tsuchime hammering. It is double-sharpened at a 15-20 degree angle for superior edge retention and performance, meeting Rockwell hardness 53 standards. The handle is made from dark pakkawood, and the knife is hand wash only.
