Its curved blade allows for a rocking motion on the cutting board, enhancing control during food preparation. Crafted from high-quality Japanese 420J2 steel, the blade is ice-hardened and twice sharpened to a 15-20 degree angle, ensuring durability and a sharp edge. The distinctive Damascus-inspired pattern features flowing water-like banding and mottling. The handle is made from dark pakkawood with a traditional hammered tsuchime finish. This forged steel knife is hand wash only and comes with a lifetime guarantee.
