About this product

The Miyabi Birchwood SG2 Chef's Knife is a handcrafted kitchen knife made in Seki, Japan, featuring a scalpel-like blade forged from SG2 micro-carbide powder steel. Its 101-layer flower Damascus design enhances durability and sharpness, while the ice-hardened CRYODUR blade maintains a precise 9.5 to 12 degree edge. The handle is crafted from premium Karelian (Masur) birchwood, a material historically used in Fabergé eggs, offering an ergonomic and elegant grip. This chef’s knife combines traditional Japanese craftsmanship with high-performance materials for precision cutting.
