Miyabi Kaizen II 8" Chef's Knife is a handcrafted Japanese chef's knife featuring a FC61 super steel core protected by 48 layers of stainless steel. Forged in Seki, Japan, the blade displays a darkened flower Damascus pattern and is ice-hardened for durability and corrosion resistance. It is hand-honed using the traditional four-step Honbazuke method to achieve a razor-sharp edge with a 9.5 to 12-degree angle. The balanced D-shaped handle is made of black pakkawood with a mosaic pin and end cap stamped with the Miyabi logo, offering a comfortable grip for precise cutting.
